Lemon & Tarragon Chicken Salad
Ingredients
- 4 C shredded chicken
- 1/2 C celery, chopped
- 1 C dried cranberries
- 1/2 red onion, chopped
- 1 C light mayo
- 1 Tb fresh tarragon, chopped
- 1/4 C lemon juice
- 1 Tb sugar (I used agave)
- 1 tsp salt
- 1 tsp pepper
Instructions
Stir mayo together with sugar, tarragon, lemon juice, and seasonings. Pour over chicken in a large bowl and stir together thoroughly, along with celery and cranberries.
Store in the fridge for up to one week.
