Lemon & Tarragon Chicken Salad

Ingredients

  • 4 C shredded chicken
  • 1/2 C celery, chopped
  • 1 C dried cranberries
  • 1/2 red onion, chopped
  • 1 C light mayo
  • 1 Tb fresh tarragon, chopped
  • 1/4 C lemon juice
  • 1 Tb sugar (I used agave)
  • 1 tsp salt
  • 1 tsp pepper

Instructions

Stir mayo together with sugar, tarragon, lemon juice, and seasonings. Pour over chicken in a large bowl and stir together thoroughly, along with celery and cranberries.

Store in the fridge for up to one week.

Great for: Sandwiches, Wraps, Salads
