Blueberry Maple Pecan Granola
- 6 C old-fashioned oats
- 1 stick (1/2 C) unsalted butter
- 1/4 C maple syrup
- 1 tsp salt
- 1 C dried blueberries
- 1 C chopped pecans
- 1 tsp maple flavor (or vanilla extract)
Measure out oats and pecans into a large bowl.
In a small saucepan, melt the butter over low heat. Add maple syrup, salt, and flavoring. Stir until dissolved. Pour over the oats and pecans, stirring until everything is well-coated. Set aside for 30 minutes to allow the oats to soak up the flavored butter mixture.
Set oven to broil. In a large, shallow dish, spread out the oat mixture as thinly as possible (it will toast faster this way). Run it under the broiler until the oats and pecans are golden brown. Stir frequently while toasting to ensure everything is cooked evenly.
Allow the granola to cool before adding your dried fruit. Mix thoroughly by hand or with a large wooden spoon. Store in a jar or plastic container for the next week or two.
Enjoy over yogurt with fruit as a parfait, with almond milk, or simply handfuls for a snack!
