A Secret Love


I love grapefruit. I don't know a whole lot of people that actually enjoy this tart citrus fruit but I crave it. I used to get super excited when I opened the kitchen fridge and saw a big bowl of segmented grapefruit that my mom peeled up. My favorite way to eat it is peeling it like an orange AND peeling off the white skin parts. However, I really don't like all of the sticky fingers. So, blog buddies, I am asking you a question.

Do you share a love for this magical citrus or are you sitting there thinking I'm crazy?

Now, for my real question.....

Have you ever used a grapefruit spoon or sectioner? Are they really worth it?

Baked Creamy Chicken Taquitos with CG Guacamole


I love Mexican food. But really, what is not to love? Maybe the calories and fat content. Ok, yes I could do without those....which is why I decided to BAKE these bad boys! If not actually healthier, I can at least tell myself that after I devour the entire batch (which is bound to happen if Tuesday's batch of cookies were any indication).

These were super super easy to make, especially since I used rotisserie chicken. Also, for those of you unlucky chefs without dishwashers, you get to cover the baking sheet with aluminum foil which cuts down on heavy duty scrubbing at clean up time =)

Baked Creamy Chicken Taquitos

Ingredients:
- 1/3 cup (3 oz.) non fat cream cheese
- 1/4 cup salsa (I used a mild red salsa)
- 1 tablespoon fresh lime juice
- 1/2 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon granulated garlic or garlic powder
- 2 tablespoons green onions, sliced
- 2 cups shredded cooked chicken
- 1 cup grated pepper jack cheese (I didn't have any so I used mozzarella)
- small corn tortillas
- salt
- cooking spray

1. Heat oven to 425. Line baking sheet with aluminum foil. Cover lightly with cooking spray and set aside.  
2. Heat cream cheese in the microwave for about 20-30 seconds. Add salsa, lime juice, cumin, chili powder, onion powder, and garlic. Stir well and then add green onions. Add chicken and cheese. Combine well.
3. Warning: the corn tortillas might crack without heating. In a damp paper towel, heat up a few tortillas at a time in the microwave for about 20 seconds. One by one, place 2-3 tablespoons of the mixture on the bottom 1/3 of the tortilla.
4. Roll up the taquito from the side closest to the mixture first. Roll up as tight as you can.
5. Place seam side down on the baking sheet. Repeat with the rest of tortillas. 
6. Spray tops with cooking spray and sprinkle with salt. Make sure the are not touching each other.
7. Bake for 15-20 minutes or until crisp and the ends start to turn golden brown.


What should you dip them in? You could be boring and dip them in salsa...OR you could make Culinary Goddess' Guacamole! I personally think it's a no brainer....

Culinary Goddess' Homemade Guacamole

Ingredients:
- 3 avocados
- 3 pinces of salt
- 1/2 tablespoons of minced garlic
- 1/4 cup red onion, diced
- squeeze of lemon juice
(you can add tomato, I would of but they didn't look good at Safeway)

Tips to cutting avocados:
- Cut vertically all the way around
- Pull apart the halves
- For the half that has the pit, take a knife and whack the pit until the knife gets stuck. Very carefully, twist the knife and the pit should come out.

1. Cut the avocados into halves and remove all pits.
2. Using a knife, slice avocados vertically and horizontally. When in little pieces, scrap out with a spoon into a bowl.



3. Add garlic, salt, onion, and lemon juice. Mix together.

Cauliflower Pizza Dough

Ba-hum-bug. Tonight, I reenacted a scene straight out of Julie and Julia. After my pizza crust came out soggy in the center of the pie, I had a minor breakdown a la Amy Adams when she dropped the chicken on the kitchen floor. I ran out of the room, curled up on the floor, and instant felt like a huge failure. Graham, bless his heart, tried to tell me that "it looks amazing!" and made some loud sounds of "Mmmm" and "wow, so good" when trying my mess of a pizza. He made me eat a bite and I actually liked the taste. I just can't get that soggy middle out of my mind.

Oh, AND...I have my camera setting on Tv (whatever that means) and not the point&shoot settings. I didn't notice until I was uploading the pictures. So, I apologize for the terrible pictures!

I've been looking at recipes and came across one for cauliflower pizza dough. Pizza dough? I've heard of cauliflower imitating mashed potatoes but never pizza dough. All of the pictures I browsed all looked delicious and very similar to the famous Italian staple. I'm guessing I just didn't cook it long enough (I only put it in for 12 minutes when the recipe said 12-15).

When I started this blog, I said I was going to post successes AND failures. Well, it has come time. However, I encourage you to give it ago and let me know how it goes! If it works, you've got a super super healthy pizza. And if it doesn't, well, you have a super super healthy squishy pizza like me =)

Cauliflower Pizza Dough

Ingredients:
- 1 cup of riced cooked cauliflower (I used a food processor)
- 1 cup of mozzarella cheese, shredded (I used low fat)
- 1 egg
- 1 teaspoon oregano
- 2 teaspoons parsley
- 1/2 teaspoon fennel

1. Preheat oven to 450. Lightly grease baking sheet.
2. Combine cauliflower, cheese, and egg in bowl. 
3. Sprinkle with oregano, parsley, and fennel.
4. Press evenly on pan.
5. Bake for 12-15 minutes.
6. Remove from oven and top with toppings/cheese/sauce.
7. Place under broiler at high heat until cheese is melted.
