Portobello Sandwich

Well, a lot has happened in the past two days. Yesterday, one of my clients at work had a huge breakthrough. It is this progress that reminds me of how much I truely do love working with children with unique abilities. I also changed the format of my blog. Do you like it? I am going to fix it more this weekend. And finally today, I participated in an all day CPI training (Crisis Prevention Intervention) for work. Why am I telling you all of this? I made a delicious sandwich for dinner last night and ran out of time to write a post. I'm hoping all of the previously mentioned will get me off the hook....maybe just a little!

Now, for the sandwich. "This might just be my new favorite"- direct quote from Graham. Interested now? It has a meaty, cheesey, fresh taste. I even got to use my new grill pan (cue the overexcitement). Quick and easy. Make this if you want a meat-free sandwich that might convince you to become vegetarian. Alas, I bring you the portobello sandwich.

Portobello Sandwich
Ingredients:
-1 large portobello mushroom cap, cleaned and sliced into 3 big pieces
-4 large slices of fresh tomato
-2 slices of fresh mozzarella
-a spoonful of pesto sauce
-foccacia bread

Season the mushroom with salt and pepper. On the grill or using a grill pan, grill the mushroom until tender. While mushroom is cooking, slice bread and spread pesto evenly on both sides. Add tomato, mozzarella, and mushroom. Serve cold or place entire sandwich on grill to heat up.
