Asiago and Cheddar Drop Biscuits

Ever been to Fog City Diner in the Embarcadero? They have these amazing cheddar biscuits that are more than heavenly. They are warm, flaky, and most likely jam packed with butter. If your in the mood for healthier savory biscuits, try these! I love these little guys because they are easy to make and better than dinner rolls. One of my favorite parts of these biscuits is the cheese, especially the cheddar. It reminds me of the 'burnt' cheese in microwavable macaroni and cheese that everybody loves.

Asiago and Cheddar Drop Biscuits

*adapted from Cooking Light

Ingredients:

1 1/4 cups flour

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon pepper

1 1/2 tablespoons chilled butter, cut into small pieces

1/2 cup grated asiago cheese

1/2 cup grated cheddar cheese

3/4 cup fat-free buttermilk

1. Preheat oven to 450 degrees.

2. Combine flour, baking powder, salt, and pepper. Whisk together well.

3. Add butter and cut in with a pastry blender until mixture resembles a coarse meal.

4. Add cheese and combine well.

5. Add buttermilk and stir until just moist.

6. Place scoops onto greased baking sheet and place in oven for about 10 minutes (or until sides are golden brown). Cool on a wire rack.
